A delightful combination of sweet blackberries and nutty pistachios in a buttery crumbly bar, perfect for a fancy treat.

- 1 cup All-Purpose Flour (or gluten-free flour)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1/4 cup Granulated Sugar
- 1/4 teaspoon Salt
- 1 large Egg Yolk
- 2–4 tablespoons Ice Water
- 2 cups Fresh Blackberries
- 1/2 cup Granulated Sugar
- 1 tablespoon Lemon Juice
- 2 tablespoons Cornstarch
- 1/2 cup Light Brown Sugar
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F and grease a square baking dish.
- Mix the flour, cold butter, sugar, and salt to create a crumbly mixture.
- Whisk together the egg yolk and ice water; then add it to the flour mix until it becomes a dough.
- Press the dough into the bottom of the prepared dish and bake for about 15 minutes.
- Combine blackberries, sugar, lemon juice, and cornstarch in a bowl and mix gently.
- Pour the mixture over the pre-baked crust.
- Combine brown sugar, baking powder, pistachios, cold butter, egg, and vanilla in another bowl.
- Sprinkle the topping over the blackberry mixture and bake for another 25-30 minutes.
- Let them cool, cut, and devour!
Notes
These bars are even better the next day. Store in an airtight container for up to 4-5 days.
