Description

Delicious Blueberry Swirl Yogurt Bites, perfect for a healthy snack with a fruity twist.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional)

Instructions

  1. Combine blueberries, honey, and lemon juice in a small saucepan over medium heat and simmer for 5 minutes until blueberries soften.
  2. Dissolve cornstarch in a little water and stir it into the blueberry mixture to thicken, then remove from heat and let cool completely.
  3. Mix Greek yogurt and vanilla extract in a bowl until smooth, adjusting sweetness with more honey or maple syrup as desired.
  4. Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
  5. Add a spoonful of the cooled blueberry compote on top of each yogurt portion and gently swirl with a toothpick.
  6. Freeze molds for at least 180 minutes until solid.
  7. Remove frozen bites from molds and store in an airtight container in the freezer, letting sit 2-3 minutes before eating for best texture.
