A gourmet grilled cheese sandwich featuring creamy brie and sweet pear, elevated with honey and fresh thyme.
Ingredients

- 2 slices of bread (your choice, preferably sourdough)
- 2 oz Brie cheese, sliced
- 1 ripe pear, thinly sliced
- 1 tablespoon honey
- Fresh thyme leaves
- Butter, for grilling
Instructions
- Spread butter on one side of each slice of bread.
- Layer the Brie cheese, pear slices, a drizzle of honey, and fresh thyme leaves on the unbuttered side of one slice.
- Top with the second slice of bread, buttered side UP.
- Heat a skillet over medium heat and place the sandwich in the pan.
- Grill for about 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
For variations, you can use goat cheese or gouda. Fresh thyme enhances the flavor, but dried thyme is a substitute in a pinch.
