A crunchy and flavorful Chicken Crispy Rice Salad with a homemade peanut dressing that will elevate your salad experience.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup crispy rice
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, diced
  • 1 cup carrots, grated
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine the shredded chicken, crispy rice, and chopped fresh vegetables.
  2. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, minced garlic, grated ginger, sesame oil, salt, and pepper until smooth.
  3. Pour the peanut dressing over the salad mixture and toss until everything is well coated.
  4. Serve immediately for that fresh crunch, or let it hang out in the fridge for later.

Notes

Add crispy rice just before serving to maintain crunch. You can substitute chicken with turkey or tofu for different protein options.
