Ingredients

- 2 cups roasted beets, diced
- 1 can chickpeas, drained and rinsed
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the roasted beets, chickpeas, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or refrigerate for up to an hour before serving.
Notes
This salad can be made ahead of time, but be mindful that the beets will color the chickpeas and feta.
