- Jumbo pasta shells
- 2 cloves garlic, minced
- 8 oz mushrooms, chopped
- 8 oz cream cheese
- 1/2 cup Parmesan cheese, grated
- 1/2 cup heavy cream
- 2 tbsp butter
- Salt to taste
- Pepper to taste
- Parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions until al dente, then drain and set aside.
- Melt butter in a skillet over medium heat and sauté the minced garlic until fragrant.
- Add the chopped mushrooms and cook until softened.
- Combine the sautéed mushrooms, cream cheese, and grated Parmesan cheese in a mixing bowl until well mixed.
- Stuff each cooked pasta shell with the mushroom mixture.
- Heat heavy cream in a saucepan with salt and pepper until warm.
- Pour the sauce into a baking dish and place the stuffed shells on top.
- Sprinkle with additional Parmesan cheese if desired.
- Bake in the preheated oven for 20-25 minutes or until bubbly and golden.
- Garnish with parsley before serving.
Notes
Feel free to add spinach or artichokes for extra flavor. Can be made ahead and stored in the fridge before baking.
