- 4 brioche or hamburger buns (toasted)

Instructions
- Cook the ground beef by heating a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned (about 5 minutes).
- Sauté the vegetables by tossing in the chopped onions, bell peppers, and minced garlic until softened.
- Season the mixture by stirring in Worcestershire sauce, ketchup, Dijon mustard, smoked paprika, salt, and black pepper. Let those flavors mingle for a solid 3-5 minutes.
- Make the cheese sauce by melting butter in a little saucepan over medium heat. Stir in flour for a minute and gradually whisk in warm milk until smooth. Add shredded cheese, mixing until creamy.
- Toast the buns by spreading butter on the insides and toasting them in a hot pan until golden brown.
- Assemble the sloppy joes by spooning the beef mixture onto the toasted buns, then drizzling with cheese sauce. Add extra cheese slices if desired.
- Serve immediately with sides like fries or chips.
