  • 1 cup all-purpose flour

  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese, softened
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F.
  2. Cream together the butter and brown sugar until it’s fluffy.
  3. Add in the egg, vanilla, and grated carrots. Stir until combined.
  4. Mix the flour, salt, cinnamon, nutmeg, and baking powder in a separate bowl.
  5. Gradually add the dry mix to the wet ingredients, being gentle.
  6. Spread the batter into a greased baking pan.
  7. Whip together the cream cheese, granulated sugar, and egg yolk until smooth.
  8. Swirl the cream cheese mixture into the batter.
  9. Bake for about 30-35 minutes or until a toothpick comes out clean.
