A refreshing street corn pasta salad packed with sweet corn, fresh veggies, and a zesty lime dressing.
Ingredients

- 8 oz pasta (rotini or fusilli)
- 2 cups fresh corn kernels (or canned/frozen)
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- Salt and pepper to taste
- Crumbled feta cheese (optional)
Instructions
- Cook the pasta according to package instructions, then drain and let it cool.
- Combine corn, bell pepper, cherry tomatoes, red onion, and cilantro in a large bowl.
- Whisk together lime juice, olive oil, salt, and pepper in a separate bowl.
- Add the cooled pasta to the bowl of veggies and pour the dressing over the top.
- Toss everything together until well-combined.
- Sprinkle with crumbled feta cheese if desired.
- Serve chilled or at room temperature.
Notes
Feel free to add other veggies like zucchini or avocado. This salad can also be prepped ahead of time; just keep feta on the side until serving.
