- 8 oz pasta (spaghetti recommended)
- 1 cup ricotta cheese
- 1 cup fresh spinach
- 1 lemon (zest and juice)
- 2 tbsp olive oil
- Salt and pepper to taste
- Parmesan cheese for topping
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the spinach and sauté until wilted.
- Mix ricotta cheese, lemon zest, and lemon juice in a bowl. Add salt and pepper to taste.
- Combine the cooked pasta with the spinach and ricotta mixture. Toss to coat evenly.
- Serve topped with Parmesan cheese.
Notes
Feel free to substitute ricotta with cottage cheese or cream cheese. This dish can be doubled for larger gatherings.
