- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes in olive oil, drained
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large skillet over medium-high heat, add the sun-dried tomatoes and sauté for about 2 minutes.
- Season the chicken breasts with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes per side, or until golden brown and fully cooked.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth, heavy cream, Italian seasoning, and Parmesan cheese, stirring until well combined.
- Return the chicken to the skillet, allowing it to simmer for a few minutes in the sauce.
- Adjust seasoning if necessary, then serve garnished with fresh basil.
