Description

A delicious Mediterranean-inspired shrimp dish with feta and sun-dried tomatoes that’s easy to prepare and packed with flavor.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh herbs, chopped (parsley or basil)
  • 1 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the shrimp and cook until pink, about 3-4 minutes.
  4. Stir in the sun-dried tomatoes and fresh herbs, cooking for an additional 2 minutes.
  5. Remove from heat and top with crumbled feta cheese.
  6. Season with salt and pepper to taste.
  7. Serve warm as a light dinner or fancy appetizer.

Notes

Feel free to use dried herbs if fresh ones aren’t available. This is a budget-friendly meal!
