Ingredients

- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh herbs, chopped (parsley or basil)
- 1 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Toss in the shrimp and cook until pink, about 3-4 minutes.
- Stir in the sun-dried tomatoes and fresh herbs, cooking for an additional 2 minutes.
- Remove from heat and top with crumbled feta cheese.
- Season with salt and pepper to taste.
- Serve warm as a light dinner or fancy appetizer.
Notes
Feel free to use dried herbs if fresh ones aren’t available. This is a budget-friendly meal!
