Description

Light and refreshing cucumber salad sandwiches perfect for summer picnics or a light lunch.


Ingredients

Scale
  • 2 Cucumbers
  • 8 oz Cream cheese
  • 4 slices Bread (white or whole grain)
  • 2 tbsp Fresh dill (or any herbs of choice)
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Lemon juice
  • Optional: red onion, capers, or any preferred veggies

Instructions

  1. Slice the cucumbers thinly and plop them into a bowl.
  2. Mix cream cheese with lemon juice, herbs, salt, and pepper until smooth.
  3. Spread the cream cheese mixture onto slices of bread.
  4. Layer sliced cucumbers on top of the cream cheese.
  5. Add any optional ingredients if desired.
  6. Top with another slice of bread, cut into quarters, and serve immediately.

Notes

For best results, assemble sandwiches just before serving to avoid soggy bread.
