Description
Light and refreshing cucumber salad sandwiches perfect for summer picnics or a light lunch.
Ingredients

- 2 Cucumbers
- 8 oz Cream cheese
- 4 slices Bread (white or whole grain)
- 2 tbsp Fresh dill (or any herbs of choice)
- Salt to taste
- Pepper to taste
- 1 tbsp Lemon juice
- Optional: red onion, capers, or any preferred veggies
Instructions
- Slice the cucumbers thinly and plop them into a bowl.
- Mix cream cheese with lemon juice, herbs, salt, and pepper until smooth.
- Spread the cream cheese mixture onto slices of bread.
- Layer sliced cucumbers on top of the cream cheese.
- Add any optional ingredients if desired.
- Top with another slice of bread, cut into quarters, and serve immediately.
Notes
For best results, assemble sandwiches just before serving to avoid soggy bread.
