Description

A healthy and delicious bowl packed with colorful vegetables, creamy hummus, and wholesome quinoa or rice.


Ingredients

  • 1 cup assorted vegetables (bell peppers, zucchini, carrots, etc.)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup hummus
  • 1/2 cup cooked quinoa or rice
  • Fresh herbs (parsley, cilantro) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the assorted vegetables into bite-sized pieces and toss them with olive oil, salt, and pepper.
  3. Spread the veggies on a baking sheet and roast for 20-25 minutes until they’re tender and slightly charred.
  4. In a bowl, place a scoop of quinoa or rice as the base.
  5. Add a generous portion of hummus on top.
  6. Once the vegetables are done roasting, top the bowl with the roasted veggies.
  7. Garnish with fresh herbs and serve warm.

Notes

This recipe is flexible; feel free to use any vegetables on hand. Enhance flavor with spices like garlic powder, paprika, or cumin.
