Description

Deliciously fluffy Swiss brioches filled with molten chocolate chips and rich vanilla custard.


Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 tsp salt
  • 1/2 cup whole milk, warmed
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup vanilla custard (store-bought or homemade)
  • 1 cup chocolate chips

Instructions

  1. Combine flour, sugar, yeast, and salt in a large bowl.
  2. Add warmed milk and softened butter. Mix until combined.
  3. Add eggs one at a time, mixing well after each.
  4. Knead the dough for about 10 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1-2 hours, or until it doubles in size.
  6. Punch down the dough and divide it into equal pieces.
  7. Roll each piece into a circle, add a spoonful of custard and sprinkle with chocolate chips.
  8. Fold to enclose the filling and place on a baking sheet.
  9. Let rise again for about 30-45 minutes.
  10. Preheat your oven to 375°F (190°C).
  11. Bake for 15-20 minutes or until golden brown.
  12. Cool slightly before serving.
