Description

A comforting and satisfying bowl of chicken spaghetti mixed with juicy tomatoes and fresh spinach.


Ingredients

  • 200g spaghetti
  • 2 chicken breasts, diced
  • 2 cups fresh spinach
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Toss in the diced chicken and cook until browned.
  4. Pour in the can of diced tomatoes and add the spaghetti.
  5. Add enough water to cover the pasta, season with salt and pepper, and bring to a boil.
  6. Reduce to a simmer and cook until the spaghetti is al dente.
  7. Stir in fresh spinach and cook until wilted.
  8. Serve with grated Parmesan cheese if desired.

Notes

Feel free to experiment with other vegetables or substitute chicken with tofu or chickpeas for a vegetarian option.
