A comforting and satisfying bowl of chicken spaghetti mixed with juicy tomatoes and fresh spinach.
Ingredients

- 200g spaghetti
- 2 chicken breasts, diced
- 2 cups fresh spinach
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is translucent.
- Toss in the diced chicken and cook until browned.
- Pour in the can of diced tomatoes and add the spaghetti.
- Add enough water to cover the pasta, season with salt and pepper, and bring to a boil.
- Reduce to a simmer and cook until the spaghetti is al dente.
- Stir in fresh spinach and cook until wilted.
- Serve with grated Parmesan cheese if desired.
Notes
Feel free to experiment with other vegetables or substitute chicken with tofu or chickpeas for a vegetarian option.
