Description

A delightful cobbler made with ripe bananas, caramelized to perfection, and topped with a rich batter and served warm with vanilla ice cream.


Ingredients

  • 4 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup chopped walnuts or pecans (optional)
  • Vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a skillet over medium heat and stir in brown sugar and cinnamon until dissolved.
  3. Add the sliced bananas and vanilla, cooking until they caramelize slightly (about 2-3 minutes).
  4. Pour the banana mixture into a greased baking dish.
  5. Mix flour, baking powder, granulated sugar, and salt in a bowl. Gradually stir in milk to form a batter.
  6. Fold in the nuts if using.
  7. Spoon the batter over the banana mixture in the baking dish.
  8. Bake for 25-30 minutes or until the top is golden and a toothpick comes out clean.
  9. Serve warm with a generous scoop of vanilla ice cream.
