A light and creamy coconut mousse made with cottage cheese and coconut cream, perfect for a quick dessert.
Ingredients

- 1 cup cottage cheese
- 1/2 cup coconut cream
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
- 1/4 cup lime juice
- Pinch of salt
Instructions
- Combine cottage cheese, coconut cream, honey (or maple syrup), vanilla extract, lime juice, and salt in a blender.
- Blend until smooth and creamy.
- Fold in shredded coconut.
- Refrigerate for at least 30 minutes to chill and set.
- Serve in dessert cups, garnished with additional shredded coconut if desired.
Notes
Use full-fat cottage cheese for a richer mousse. Chill coconut milk before using if coconut cream is not available.
