A delicious and healthy twist on cheesecake pudding that combines cottage cheese, fresh strawberries, and chia seeds for a protein-packed treat.

- 1 cup cottage cheese
- 1 cup strawberries, pureed
- 1/4 cup chia seeds
- 1/2 cup almond milk (or milk of choice)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh strawberries for topping
Instructions
- In a bowl, mix together the cottage cheese, pureed strawberries, chia seeds, almond milk, honey or maple syrup, and vanilla extract.
- Stir until well combined.
- Cover and refrigerate for at least 120 minutes or overnight until the chia seeds have absorbed the liquid and the mixture has thickened.
- Serve in bowls topped with fresh strawberries.
Notes
Can use frozen strawberries; just thaw and puree them first. Keep in fridge for about 3–4 days if covered.
