White Chicken Chili

Description

A warm and comforting White Chicken Chili with tender chicken, beans, and a deliciously creamy finish.


Ingredients

  • pounds boneless skinless chicken breasts or thighs, cubed
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz) white beans, drained and rinsed
  • 2 cans (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • 4 ounces cream cheese, softened
  • ½ cup sour cream or Greek yogurt
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Chopped cilantro and sliced jalapeños for serving (optional)

Instructions

  1. Heat oil in a large pot over medium-high heat and sear the chicken until browned but not cooked through.
  2. Remove chicken, sauté onion until translucid, then add garlic, cumin, oregano; cook until fragrant.
  3. Dump beans, chiles, chicken, and broth into the pot. Bring to a simmer, cover, and let it cook for 20 minutes.
  4. Stir in cream cheese and sour cream off heat so you don’t get curdled betrayal. Add lime, salt, pepper.
  5. Serve with cilantro, jalapeños, or tortilla chips.

Notes

For a quicker meal, use shredded rotisserie chicken. This recipe can also be made in a slow cooker.
