- 2 cups almond flour
- 1/2 cup erythritol (or other keto-friendly sweetener)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix together the almond flour, erythritol, baking soda, and salt in a bowl.
- Combine melted butter, egg, and vanilla extract in another bowl. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients and stir until a dough forms. Fold in chocolate chips.
- Scoop large balls of dough onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
You can chill the dough for denser cookies. Don’t overbake to keep them chewy; they continue to firm up as they cool.
