Ingredients

  • 4 cups chicken broth
  • 1 cup noodles (egg or rice noodles)
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • Salt and pepper to taste
  • 2 tablespoons soy sauce (optional)
  • Green onions for garnish (optional)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, ginger, and garlic, sautéing until fragrant.
  2. Add the diced chicken and cook until browned.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the noodles and cook until tender, about 5-7 minutes.
  6. Season with salt, pepper, and soy sauce if desired.
  7. Serve hot, garnished with green onions.

For better texture, consider cooking noodles separately if you expect leftovers.
