Ingredients

- 4 cups chicken broth
- 1 cup noodles (egg or rice noodles)
- 1 tablespoon ginger, minced
- 1 tablespoon garlic, minced
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, chopped
- Salt and pepper to taste
- 2 tablespoons soy sauce (optional)
- Green onions for garnish (optional)
Instructions
- In a large pot, heat some oil over medium heat. Add the onion, ginger, and garlic, sautéing until fragrant.
- Add the diced chicken and cook until browned.
- Stir in the carrots and celery, cooking for another 5 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the noodles and cook until tender, about 5-7 minutes.
- Season with salt, pepper, and soy sauce if desired.
- Serve hot, garnished with green onions.
Notes
For better texture, consider cooking noodles separately if you expect leftovers.
