Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, and salt in a large bowl.
  3. Mix the sugars, oil, and eggs until well combined, then stir in the vanilla extract.
  4. Add the dry ingredients to the wet mixture until just combined, then fold in shredded carrots, crushed pineapple, and walnuts if using.
  5. Divide the batter between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
