Ingredients

  • 8 oz cream cheese, softened
  • 1 cup chicken broth
  • 1 can diced tomatoes (drained or not)
  • 1 can green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Sauté the chopped onion and minced garlic until translucent.
  2. Add the shredded chicken, diced tomatoes, green chilies, chicken broth, chili powder, cumin, salt, and pepper. Stir well to combine.
  3. Cook on medium heat until heated through.
  4. Stir in the softened cream cheese until fully melted and incorporated.
  5. Serve hot, topped with shredded cheese and cilantro if desired.

Notes

Warm the cream cheese slightly or cube it for faster melting. If the chili looks thin, simmer longer; if too thick, add a splash more broth.
