Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil (use the good stuff — you’ll taste it)
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato cubes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender.
  3. In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the roasted sweet potatoes, vegetable broth, oregano, and thyme to the pot. Bring to a boil, then reduce to a simmer for 10-15 minutes.
  6. Use an immersion blender to puree the soup to your desired consistency.
  7. Season with additional salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.
